Hi, is it possible to display the name of the creator of the document in a plain text field in a similar fashion to the option for 'Created'? in other words use - Created: [Created] - in the plain text control?

Hi there, after searching some more I came across the use of the 'Author' field which results in the same values as the name normally in the CreatedBy field.

Exactly! Alternativaly, you can use display names in Text controls, [Created By] in your case.
